in the SKILLS FACTORY on Samos
One of the most crucial and popular departments within the SKILLS FACTORY is our kitchen. Each day, our international team prepares nutritious and wholesome meals for the people trapped in the camp, where malnutrition and spoiled food are the harsh reality of daily life.
Our work in the SKILLS-kitchen includes:
- Menu Planning, Budget Calculation, and Local Ingredient Purchasing: Planning diverse menus, calculating budgets, sourcing ingredients locally.
- Daily Preparation of Fresh Meals: Cooking daily meals for team members and their relatives in the camp (approximately 40–50 people, with potential for expansion).
- Regular Baked Goods Preparation: Baking various items, including bread, cakes, biscuits, cereal bars, and cakes for special occasions.
- Cleaning Tasks and Storage Management: Performing cleaning duties, maintaining and organizing storage areas, labeling and managing leftovers. Training: Offering training at three distinct levels – from kitchen introduction and building kitchen confidence to advanced kitchen management.

- Exchange of Recipes and Professional Knowledge: Collaborating on recipes and sharing professional knowledge from diverse culinary backgrounds worldwide.
- Utilization and Conservation of Local Products: Incorporating local products into meals, especially during harvest seasons, and implementing strategies for efficient use and preservation.

Department Sponsoring
Over the past year, Greece has faced severe inflation, which has led in particular to a sharp rise in food prices. In order to continue to operate our kitchen and to prepare fresh and varied dishes every day, we depend on donations and the support of our sponsors.
We pay particular attention to using vegetables from our own garden and sourcing all other produce from local markets whenever possible. In this way we want to actively support local agriculture and small family businesses while ensuring that we use fresh and quality ingredients in our kitchen.
Since the summer of 2023, the kitchen and bakery department has been generously sponsored by our partner #leavenoonebehind. We are incredibly happy and grateful for this support and look forward to a successful collaboration. Together, we can make a positive impact and ensure that no one is left behind.
